arch/*: Kconfig: fix documentation for NMI watchdog

Changeset f390c6dffa46 ("watchdog: Update documentation") updated
the documentation, removing the old nmi_watchdog.txt and adding
a file with a new content.

Update Kconfig files accordingly.
